This recipe is very similar to the one you usually find on the side of the peanut butter jar but it's got a couple of extra ingredients that I hadn't seen before - chocolate chips and peanuts.
Flourless Peanut-Chocolate Cookies

makes 24+ cookies
- 1 cup creamy peanut butter
- 3/4 cup sugar
- 1 large egg (lightly beaten)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup semisweet chocolate chips
- 1/2 cup roasted salted peanuts
Preheat oven to 350F. In a large bowl, stir together 1 cup creamy peanut butter, 3/4
cup sugar, 1 large egg (lightly beaten), 1/2 teaspoon baking soda, and
1/4 teaspoon salt until well combined. Stir in 3/4 cup semisweet
chocolate chips and 1/2 cup roasted salted peanuts.
Use a small cookie scoop to portion out the dough and place 2 inches apart on two baking sheets.
Bake until cookies are golden and puffed, 12 to 14 minutes,
rotating sheets from top to bottom and front to back halfway through.
Cool 5 minutes on sheets then transfer cookies to racks to cool completely.
These cookies are absolutely delicious. Most of the people who tried them didn't believe that they had no flour of any kind in there. They are a little crumbly and a bit delicate but I think they're going to become one of my go-to recipes. Super easy and delicious.
Here's my tip to go with this recipe - when measuring the peanut butter spray the measuring cup with cooking spray or wipe with a little bit of vegetable oil and a bit of paper towel. The peanut butter will slide right out of the cup. The same goes for other sticky ingredients like honey, corn syrup, or molasses.
